Recipes and Tips

I love to create what I call "Stone Soup" recipes whether I do it for my family  and last minute guests or for my clients with a little bit of leftover veggies and meats and what they have in their pantry and fridge.

Some of these have become my family standbys or go-to dishes which I never put on paper before.

I hope you enjoy them as much as we do.

I was cooking for a new client and found I had an extra zucchini, half an onion, mushrooms, garlic, and tomatoes.  My stir fry became one of their favorite dishes.  The trick is a very hot pan, just a little oil and allowing the onions and summer squash to brown a bit on the edges at least.  The carmelization adds to the flavor and sweetness to the dish.

My husband went shopping  and bought chicken cutlets and beef stew meat.  Time got away from us as did the grocery shopping so I made the chicken cutlets with onions, olives (green), and  balsamic vinegar in a stir fry.

Beef stew with String Beans
1 pound of beef stew meat, lightly salted, with pepper and rubbed with garlic(or add garlic powder)
2 cups tomato juice and 1 cup water
2 cinnamon sticks
1 pound string beans with ends cut off

Brown the meat in olive oil in a dutch oven
, when browned on all sides, take meat out and brown onions in the same pan add the meat back to the pan and add the tomato juice and water,and cinnamon sticks.  Cover and simmer 2 hours.  then allow to cool over night and skim off any fat,  (I didn't have much).  Add the string beans and cincook for 30 to 45 mins on low to medium flame.

Brownies kicked up!!

To the batter of your regular brownies, swirl in about a quarter cup of raspberry jam and and chocolate chips...So good! 

If time
gets away from you while you are cooking, and food gets burnt, this is a solvable problem! Take out any usable food and place in another container.  Then, add a few cups of water or fill the pan for several inches above the burnt section and put it on a medium to high flame,  Add a splash or two of white vinegar and a spoonful of baking soda (the stuff you use to freshen the refrigerator.0  It will bubble at first.  Let this boil for a few minutes, then cool.  Scrape with a non-abrasisive spoon if you can.  Then go through regular washing and it should be a breeze!
